‘Selling Sunset’s Vanessa Villela, 44, Does Intermittent Fasting Diet

It may come as a surprise to learn that Vanessa Villela, one of the newer brokers, actually prefers cooking at home. She and her fiancé Tom Fraud make most of their meals together and only occasionally hit a restaurant. “We try to eat healthy, everything organic. I want my body to be healthy,” says Vanessa.

She’s been following an intermittent fasting diet for about four years. It’s made a significant impact on how she feels and her bod. Vanessa also eliminated gluten from her meals and tries to avoid processed foods as much as possible. She also never counts calories.

On weekends, she gives herself a bit more freedom, but only a bit. “Everything in moderation,” says Vanessa. That moderation includes meals like pizza, ice cream, and pasta. “It’s about health,” she tells Women’s Health. “I do like to be healthy. I want to live a long life.”

Fueling her active life (Vanessa works out every day), she says she needs carbs. “My body works better with carbs,” says Vanessa. “If I don’t eat carbs, I feel dizzy, I have no energy so I don’t want to work out, and I get a headache.”

Breakfast

Following her intermittent fasting schedule, Vanessa usually delays her first meal until noon. Before that, she’ll sip celery juice and have some black coffee. “That’s the only thing I can have for a couple of hours because I don’t want to break my fasting,” she says. Vanessa sticks to a 14/10 intermittent fasting schedule.

She opts for oatmeal to break her fast. “I eat an oatmeal with blueberries, cinnamon, vanilla, and sometimes oat milk,” says Vanessa.

Lunch

A few hours later, and it’s time for lunch. Vanessa’s go-to is a protein-packed salad, which she enjoys around 2:00 or 3:00 pm

She tops lettuce with garbanzo beans, turkey slices or tuna, and tomatoes. Her dressing of choice is a simple combo of olive oil and balsamic vinegar with salt and pepper.

If she does eat out at a restaurant for lunch, she loves a burger sans bun. Skipping the bun is about the flavor for her. “I love the taste of a burger without the bun because I can taste the meat, I can taste the cheese better,” she says.

Vanessa doesn’t have time for snacking between mealtimes, either. Before she started intermittent fasting, she would eat five meals a day. Now, three separate meals gives her all the fuel she needs.

Dinner

Her last meal of the day is also her biggest. “That’s how I do it, and it works for me,” she says. Dinnertime is around 8:00 pm, and she usually cooks and eats with her fiancé.

“It’s an act of love,” she says. “He loves cooking for me and I love cooking for him. We really enjoy cooking at home.” (Every night is date night!)

On Vanessa’s plate, you’ll find more protein, usually chicken or beef with rice and veggies. Fajitas are a fave, too. She only eats grass fed, organic beef and in ground form. Not steak because it tends to be too chewy. “I know that for a fact it’s gonna be tasty, juicy, and it’s easy to cook.”

A number of different vegetables make Vanessa’s top list. “I love broccoli and I love cauliflower,” she says. “I really love zucchini.” She makes them taste “sensational,” too. She grills the zucchini with a bit of cheese on top. The broccoli gets lemon and her fiancé’s special touch. And cheese sauce or buffalo sauce accompanies the baked cauliflower.

Italian restaurants are another option for them for pasta. “I prefer to go out and have a good pasta out and have somebody else do all the work in a good Italian restaurant,” Vanessa adds.

Drinks

Vanessa stays hydrated with tasty bevvies all day long. She doesn’t drink sodas, but is a fan of the sugar-free carbonation.

“I love sparkling water with lime or lemon,” says Vanessa. “The sensation and bubbles are my favorite.” She’ll also flavor still water with lemon or fresh ginger for inflammation.

Come Friday and Saturday nights, Vanessa may pour a glass or two of wine. When she does, it’s always red. “Cabernet, I like them oaky, deep, and rich,” she says. “I just enjoy a glass of wine with my dinner with my fiancé. If we go out to a Mexican restaurant, of course I’ll have a margarita with tequila.”

Dessert

Vanessa rarely has dessert. When she does, it’s likely ice cream. She used to eat a square of dark chocolate every day, but now reserves sweets for special occasions only. Instead, Vanessa will have cherries in the evening.
